Chicken dishes are common all around the world. Every age group no matter it is children, youngsters or adults like chicken dishes a lot. You can have many yummy and different experiments while cooking chicken. Mexican chicken as the name suggest is a Mexican style cooked chicken with a little gravy and spices.
- 1 kg boneless chicken (cut in cubes)
- 1 tablespoon garlic paste
- 1 tablespoon white pepper powder
- 2 cups tomato ketchup
- 2 cups tomato paste
- 4 tablespoons vinegar
- Salt according to your taste
- Freshly chopped red chillies 7-9
- 2 medium sized cubed capsicum
- One chopped spring onion
- 4 tablespoon cooking oil
In a bowl add chicken, garlic paste, salt and white pepper and let it marinate for half an hour in refrigerator. After the chicken is marinated add it into heated oil. Fry the chicken for a few minutes till the water is dried. After the chicken is cooked and the water is dried add tomato paste and tomato ketchup in the chicken and cook for 5 to 7 minutes. In the end add red chillies and capsicum and let it cook on a low heat for 5 to 6 minutes. Dish out the chicken and garnish with spring onion.
You can have it with either garlic or Mexican rice and also with pita bread. This recipe can serve 4 to 6 people and will require a total of 40 minutes of cooking and preparation time.
