Healthy crock pot recipes

Our lives have become so hectic and busy that we barely have the time to sit down with our families to have a proper home cooked meal. Take out, home delivery and microwavable food is all that we can spare time for. A women or a man can only pray to have a way to be able to eat a healthy home cooked meal without sweating over a stove for two hours. Crock pot – the answer to every working man and woman’s prayers! It is the easiest way to have healthy slow, home cooked meals without having to cook for hours. All you have to do is mix in the ingredients and pop them into a crock pot for a prescribed amount of time during which it slowly cooks the food. Here are a few delicious recipes for you to try at home cooking with a crock pot!
Vegetarian breakfast burritos
Ingredients:
- Drained and rinsed canned black beans – 1 can, 15oz
- Diced tomatoes (don’t drain) with green chilies – 1 can, 10oz
- Pearl barley uncooked –1 cup
- Vegetable broth – 2 cups
- Frozen corn – 3/4 cups
- Green onions (chopped) – 1/4 cup
- Fresh squeezed lime juice – 1 tablespoon
- Ground cumin – 1 teaspoon
- Chili powder – 1 teaspoon
- Ground red pepper – 1/2 teaspoon
- Chopped garlic – 3
Directions:
Place these ingredients in to a crock pot and give it a nice stir. Then set the pot on low. Cook it for about four to five hours. After the filling is done, scramble the eggs. Then spread the eggs and some of the filling on a flour tortilla and garnish with cheddar cheese, salsa, guacamole, fresh lettuce or fresh cilantro.
Recipe for Slow-Cooker Berry Cobbler
Ingredients
- all-purpose flour, divided – 1 to 1/4 cups
- plus 1 cup sugar, divided – 2 tablespoons
- baking powder – 1 teaspoon
- ground cinnamon – 1/4 teaspoon
- egg lightly beaten – 1
- fat-free milk – 1/4 cup
- canola oil – 2 tablespoons
- salt – 1/8 teaspoon
- fresh or frozen raspberries, thawed – 2 cups
- fresh or frozen blueberries, thawed – 2 cups
- frozen yogurt (Low-fat) vanilla flavored, optional
Directions:
Take a large bowl and mix in 1 cup of flour, 2 tablespoons of sugar, baking powder and cinnamon. Then combine the egg and milk with oil and keep stirring the dry ingredients until the batter is thickened and moistened. After that coat the slow cooker (5 – qt) with cooking spray and spread the batter evenly into it. Combine the salt and remaining flour and sugar in a large bowl along with adding the berries into it and toss to coat. Then evenly spread over the batter. Cover it and cook on high for about 2 to 2 and a half hour or until a toothpick inserted into the cobbler comes out clean. You may serve it with low-fat vanilla frozen yogurt if you want.
